Cinco De Mayo Fiesta roast serves 4 to 6. This recipe is meant to be done in a Crock pot or similar slow cooker.
Ingredients:
- 2 medium potatoes skinned and sliced into roughly ¼ inch slices (you can also spiralize them in an electric spiralizer)
- I prefer to use a premium 2 to 3 pound roast but you can substitute pot or chuck roast if you prefer.
- ½ a cup of tequila
- 2 teaspoons of ground black pepper
- 1 teaspoon of salt (Check out our recommended salt and pepper grinder sets!)
- 1 teaspoon of minced garlic (Here are some great garlic presses for you!)
- 1 can of diced tomatoes (open with the best can opener)
- 2 medium yellow onions chopped (Here are some great onion choppers for you!)
- A bag of fire roasted frozen corn/ you can substitute a drained can of whole corn
- 1 bell pepper chopped
- 1 can of mild green Chiles diced
- 2 cups of beef broth
- A 32 ounce container of Clamato tomato drink (You won’t use it all)
I like to cover the bottom of the cooker with the sliced potato then I add the roast on top and pack the remaining potato slices around it. I pour the tequila directly over the meat. Then I add the salt and pepper evenly over the meat and the potatoes. I add the garlic to the cooker if you really like garlic you can rub it directly on the meat but I typically don’t. Then I drain the can of tomatoes and add them along with all of the other vegetables.
I add the beef broth and then I add enough Clamato juice to completely submerge the beef. I set the slow cooker to low and cook for 8 to 10 hours depending on your cooker. If you don’t have that much time it can be done on a higher setting for 4 to 6 hours but I personally think it tastes better if you let it cook longer at a lower temperature.
I serve it in bowls almost like a soup as the broth is absolutely delicious. You can accompany the meal with a frozen margarita or even a hearty red wine.

This is a relatively mild Mexican dish. You can liven it up with jalapenos or warmer peppers in addition or instead of the mild green chilies or you can add Tabasco sauce to taste if you are looking for something a little more adventurous.
